Welcome aboard. 45 feels like 100??? Wow, you really are new to this. Fun isn't it :-). Before moving back to the west coast, I would max out my 98 Savage every couple weeks on an abandoned airfield or closed super highway. Believe me, 85 is about the fastest you want to run on a stocker. Even having cut 40-50 pounds of excess garbage off the bike, at full throttle it still handled like crap. Save the high speed hot dogging for the kids on the crotch rockets, enjoy the Savage the way it was meant to be used.
As for the wind buffeting, I've always found it helps to crouch down a bit over the tank, preventing a smaller sail to the oncoming or overtaking pressure wave (if you have a trucker friend, get him to park the rig in a big lot some weekend and get accustomed to riding near it, then repeat with the rig moving). It just takes time to learn how you and your machine will best handle big rigs, grooved pavement (I hate it), gravel, etc. Take your time, have fun, and if/when you get frustrated, take a break. Motorcycles are fun, don't let training drag you down.
